At room temperature, it is in the form of a white to yellow granular solid. It has a LB value of 2.1, which is quite lipophilic. As a food additive, span sorbitan ursorate can reduce the turbidity of vegetable oil containing high saturated fatty acids. It can also improve the fat crystal structure and stability in chocolate and margarine. Furthermore, it acts as an emulsifier in the cosmetic industry and as a lubricant in the textile industry.
