Polysorbate 61

 Polysorbate 61, also known as polyoxyethylene (4) sorbitan monostearate consists of sorbitol, ethylene oxide, and stearic acid. It has a molecular formula of C32H62O10. At room temperature, it is in the form of pale-yellow to amber-colored oily liquid or paste. It is an O/W emulsifier with an HLB value of 9.6. It is soluble in ethanol, ethyl acetate, and toluene. It can also be dispersed in water.
