Sorbitan monopalmitate , also known as sorbitan palmitate/SMP, is synthesized by the esterification of sorbitan with palmitic acid. It has a molecular formula of C22H42O6. At room temperature, it is a light yellow granular solid. Monopalmitate is a W/O emulsifier that has an HLB value of 6.7. Besides emulsification, sorbitan monopalmitate can also act as a stabilizer, thickener for food, pharmaceutical, and cosmetic formulations; and as a lubricant, softener, finishing agent for the textile industry.
